W Aspen Welcomes Acclaimed Quintana Roo-Based Restauranteur, Arca Tulum, as part of the hotel’s innovative pop-up series.

Renowned for bringing award-winning food and beverage experiences to one of the world’s most iconic mountain towns, W Aspen is continuing its successful pop-up series with Arca Tulum for an exclusive two-day tasting experience. On the evenings of Friday, March 29, and Saturday, March 30, W Aspen’s Grotto, currently home to Ponyboy, will undergo a captivating transformation into Tulum’s celebrated casual fine-dining haven. The pop-up will present a seasonally driven menu that distinctly showcases vibrant flavors indigenous to the Yucatan region. By sourcing local Mexican ingredients, and embracing the farm-to-table movement, Arca pays homage to the rich culinary heritage of the area while offering a truly immersive dining experience.

The Arca Tulum takeover will offer two seating in Ponyboy each evening at 6PM and 8:30PM. Guests can anticipate a curated menu of four flora and fauna forward bites, each perfectly paired with signature cocktails. All ingredients are sourced directly from local purveyors in Mexico, emphasizing Arca’s commitment to presenting a truly immersive experience representative of Tulum’s culinary excellence. Limited tickets for this exclusive happening are available at $200 per person (must be 21 or over), exclusive of tax and fees, and can be purchased HERE.

The Arca Tulum pop-up is W Aspen’s sixth takeover, following the successful hosting of the renowned Mexico City-based bar, Limantour Licorería, this past February. During the summer season, the property showcased the acclaimed Chicago speakeasy, Three Dots, and a Dash, at its stunning, year-round, open-to-the-public venue, WET Deck Rooftop.

HaSalon Winter Restaurant Pop-Up

This winter, W Aspen debuts HaSalon, the latest culinary experience by renowned Chef Eyal Shani, open from Dec 1, 2024, to April 2025.

Joining celebrated locations worldwide—like NYC, Miami Beach, Tel Aviv, and Las Vegas—HaSalon will bring Mediterranean flavors to Aspen with locally-sourced ingredients and bold, vibrant dishes.

Guests can enjoy two dinner experiences: a cozy, music-filled setting before 8 PM, and a lively, high-energy scene after, complete with dancing. Signature dishes include charred beetroot carpaccio, bluefin tuna, ribeye steak, and ricotta clouds, capturing the essence of Chef Shani’s international acclaim.
